Krab Cakes

I experimented in the kitchen tonight and was proud of myself. So:

Krab Cakes

finely chop/process, then saute in olive oil:
1 stalk celery
1/2 small onion
1 large clove garlic

thaw, then finely chop/process 16 oz imitation crab, then combine with above mixture. Add 1 Tbsp lemon juice. Split the mixture in half. You can make crab salad with half of it and serve it with another meal as an appetizer, or make more crab cakes later. To make crab salad, add 1/2 cup mayo or miracle whip and salt to taste.

With half of the mixture, add 2 eggs and mix together.

Process 4 slices wheat bread to fine bread crumbs. Add:
1 tsp dry mustard
1 tbsp brown sugar
salt and pepper to taste

Add 1/2 cup of the bread crumbs to the crab and egg mixture.

Heat 2 Tbsp olive oil in frying pan. Form crab mixture into patties, then drop into bread crumbs. Top the patty with more bread crumbs, then use spatula to pick up the patty and place it in hot oil. (This isn't easy, and I made a big mess!) If the patty comes apart, try to reshape with spoon. Fry to desired color, then flip.

I served these on buns with melted mozzarella, avocado slices, and chopped spinach. Kira wouldn't taste them and Russell wasn't here, but everyone else loved them!
